It's that time of year: I never know where I'm serving lunch any given day... until lunchtime. Depending on what job the men are doing and where they are doing it, Josh requests his meals at varying locations. Sometimes he eats in the field, literally.... I drive out in the field and we sit and eat. Sometimes I'll meet him on one farm yard or another if he's working close to one. Sometimes it might be on the porch so he can come up to the house, but keep his dirty clothes on instead of having to change. Sometimes he comes in. And its ALMOST always at noon. No matter where it's at, I always serve Josh a hot lunch. (Or dinner, as he calls it. I think calling lunch 'dinner' is weird; lunch is a noon meal whereas dinner is a special occasion meal, like with company, anytime of day.)
Supper is a different story. There is no set time for supper and we ALMOST always eat it at home. I have amazing kids. If we are out and about, as we usually are, they don't eat supper until 8:00 or later and they never complain. (Thanks to generous afternoon snacks at about 3:30, one reason hence the baking several times a week.) Josh and I always eat whenever he comes in from working, which could be anywhere from 8:00 to who knows when. Last night, we sat down to supper at 10:15 and tonight sounds like it might be later. And supper ranges from anything from crock pot meals, leftovers or sandwiches to something fresh but simple, like tacos, taco salad or pasta.
I appreciate Josh's hard work and never give him a hard time about working late, missing family meals or delivering meals to wherever. And Josh appreciates the extra effort he knows it takes on my part to accommodate his schedule, the kids and the meals and never complains about leftovers or sandwiches. We're good that way :-)

This little man is Daddy's right hand man. If at all possible, he is right there alongside Josh doing whatever it is they're doing. It's a great motivator for him to work hard at school to finish in a timely manner. If he works hard and gets done in the morning, he has the entire afternoon to spend out with the men. While "the little kids" (Sarah and our buddy that I babysit) chose to eat at home on this day, Caleb insisted to eat out with Daddy. And boy, can he put the food away! Already he eats about as much as me! |

Today's menu: pork chops baked in a creamy corn gravy, mashed taters and bread. The pork chops are delicious!!!! The picture doesn't really do it justice.
I know, I know... the bread looks store bought. And with head hung low, I admit it is. But I have baked once or twice a day for the past three days in a row, and while it DID occur to me to make rolls this morning, I just wanted a break. Ya know? So I pulled an emergency loaf from the freezer.
I'll do better next time. |
